JOB REQUIREMENTS:
Education: Minimum requirements include one of the following:
Certification as a Dietary Manager.
Certification as a Food Services Manager.
Associates (or higher) degree in Food Service Management, Hospitality, Restaurant Management, or course of study including such courses from an accredited institution of higher learning.

Must meet State of South Dakota requirements for Food Service/Dietary Managers.

Experience: Two years’ experience in food service management. Prior experience in a healthcare setting is preferred.

SHIFT:
11:00am-7:00pm with a weekend rotation

POSITION SUMMARY:
The primary purpose of this job position is to be accountable for the daily operation of the front of house and dining room experience of the Culinary Department in accordance with current federal, state, and local standards, guidelines, and regulations, with established policies and procedures to promote resident satisfaction through quality food service. In addition, this position is responsible for front of house staff training, dining room appearance and the Parkside Retirement Community dining program. The Manager of Culinary Hospitality Operations works directly with the Director of Culinary Operations and the Manager of Culinary Production Operations as well as other key leaders to ensure the very best dining experience each day at all dining venues and during special events, holidays and other occasions involving food service.

DUTIES AND RESPONSIBILITIES:
Recruit and interview potential employees and train, coach, evaluate and direct employees in the Culinary Department.
Ensure staff is following established policies and procedures through training, coaching, and directing. Disciplinary action up to and including termination of employment may be necessary.
Develop work schedules to ensure adequate staff to cover each shift.
Utilize forecasts, food waste records, inventory, and equipment records to plan the purchase of food, supplies, and equipment.
Monitor budgets for cost-effectiveness.
Ensure standards, policies, and procedures are followed in preparing and serving food.
Maintain a guest satisfaction program to solicit feedback from residents, tenants, and families. The program should include internal surveys, council minutes, tableside interviews, and other appropriate metrics.
Participate in menu planning including responding to resident preferences, substitution lists, therapeutic diets, and industry trends.
Observe meals and ensure that standards for appearance, palatability, temperature, and serving times are met. Ensure that foods are prepared according to production schedules, menus and standardized recipes.
Manage the preparation and service of special nourishments and supplemental nutrition.
Ensure safe receiving, storage, preparation, and service of food. Protect food in all phases of preparation, holding, service, cooking, and transportation.
Prepare cleaning schedules.
Maintain equipment to ensure food safety and safety of employees.
Process new diet orders and diet changes. Keep diet cards updated.
Complete the assigned MDS dietary section according to required timeline.
Determine resident diet needs and develop appropriate dietary plans in cooperation with Registered Dietician and in compliance with physician orders.
Review plan of care related to nutritional status. Document and address concerns to improve the resident’s nutritional status and eating function.
Review, revise and implement, in cooperation with the interdisciplinary team, the resident’s nutritional assessment and plan of care.
Oversee food preparation, food services and storage. Maintain a clean and sanitary environment. Ensure proper sanitation and safely practices of staff.
Work directly with the contracted Registered Dietician as needed, to ensure all guidelines and regulations are followed. Support RD duties as needed.
Create and implement a restaurant style dining program at Parkside, to include special events, family parties and other attractions.
